Our Vineyard

It all begins in the field, in the vineyard. To create a great wine you need to give the grape due respect and look after the natural environment in which it grows. From then on man plays his part. Deciding on the varieties of grape to use and the tasks to be done are not a matter of chance.
Our vineyard, a certified organic vineyard in the place known as Los Balancines (Oliva de Mérida), has 52 hectares of the varieties Garnacha Tintorera, Cabernet Sauvignon, Tempranillo, Syrah, Petit Verdot, Bruñal, Graciano and Touriga Nacional. Next to already existing old vineyards we have planted up new plots, based on the experience we have gained from a meticulous selection process, guided by what happens in our older vineyards.
Our entire vineyard is rain-fed and gobelet trained, with the plants well spaced out. This allows us to make efficient use of the water in our soil, which is very stony on the surface, has plenty of fertility and good depth, with great capacity for storing rainwater.
We have gradually created a great vineyard at Los Balancines, tucked away between two mountain ranges (Juan Bueno and Peñas Blancas) and enjoying advantageous conditions for making wines with great personality. We have at the same time enriched the environment, rehabilitating natural areas and providing a sustainable way of life for people who have lived for generations in the place where we work.
These people, under the guidance of our technical team, tend our vineyard with great care. From pruning appropriate for each grape variety or particular circumstance, to meticulous, evenly balanced green pruning. From thinning the grape clusters when necessary to the moment of their picking, which is done by hand and at night, and placing in small or large boxes depending on the variety.

Our Winery

Once the grapes are in the winery, all the new facilities are adapted to our way of working the vineyard. We process each variety and each plot separately, which means we need small state-of-the-art tanks containing between 8,000 and 10,000 litres. Our exhaustive control of the temperatures of maceration and fermentation enable us to bring out the subtle individuality of each grape. The laborious manual remontage is carried out by patient personnel well aware of the importance of this process. Only the highest quality wine obtained without pressing and drained from the tanks by gravity goes into the barriques which we select for their suitability to the type of grape, the particular plot and the wine we wish to make. Most of our barriques are French and we combine different ages and ageing periods according to the variety and according to the dictates of our continuous sampling process. Only at the end, when each barrique has done its work and the wine tells us that the right time is drawing near, do we define the final coupage or blend, by means of a tasting process that is as painstaking as it is enjoyable. And every year with the same philosophy, although the coupages have no reason to be the same, they do have to be the best.

Our Philosophy

Out of the right combination of nature and sensitivity great human achievements are born. One of them is wine.

Pago los Balancines is a vineyard. It is surrounded by olive trees, hills and mountain ranges, so for us our vocation is very clear, to make quality wines from the vineyard, taking special care over the natural world and the environment in which we live. We make wines that are among the best available, both in Spain and abroad, but we work from a humble perspective, learning with every new step. We take care of the small things as a means of achieving the wine that we have imagined, the wine we have in our minds when we see the grapes on the plant.

What differentiates us from others is having a team that lives for Pago los Balancines, a group of people devoted to the project with body and soul.

We make wines with soul and these wines can only be made from grapes that come from vineyards that are treated with as much care and attention as we can muster. We plan each task that we carry out in the vineyard over time, meticulously, thinking out each step in detail according to the year, the climate, the previous harvest and the next one. Our vineyard is worked according to ecological guidelines through our own conviction. This obsession for the vineyard matches our love of nature and our belief that a vineyard treated with great care produces better wines.

Collections

The Bootleg Wine collection is only put on the market when the harvest has been exceptional. Mastines (mastiffs) is our new wine collection, inspired by our own breeding of the Extremadura mastiff. Crash wine labels are inspired by the work of pop artist Roy Lichtenstein.
