Tasting notes

Deep cherry red with purple highlights. Complex, with red fruit aromas twinned with cinnamon, pepper and soft toast of the wood. Good pace, full-bodied, with lots of fruit. A well-balanced wine with sweet tannins, not aggressive, that facilitates the tasting. Impressive aftertaste of ripe fruit.

Food pairing notes

Perfect with lasagna, pizza and dishes with tomato-based sauces. Barbecue grilled-meats, smoky dishes. Grits, polenta, and dishes with corn as a major ingredient. Mexican food such as tacos, nachos, burritos, and chiles rellenos.

Suggested serving temperature: 13ºC to 18ºC

Winemaker notes

Pre-fermentative cold maceration is used to enhance the extraction and stabilize the polyphenolic load. Careful aging in oak barrels to bring to the wine a feel of aging without masking the properties that the variety gives to the wine, exactly 4 months of oxidative aging in French, American and Central European oak barrels with an average age of two years. The wine then spends another two months in the bottle to round the wine in both mouth and aromas.
