Tasting notes

Deep red cherry colour. On the nose it reveals notes of black ripened fruits and spicy aromas from the wood. Silky entrance in the mouth with pleasant tannins. Long and spicy aftertaste.

Perfect with red meats, dry meats and aged cheese, stews and smoked food.
Suggested serving temperature: 17ºC to 18ºC

Winemaker notes

Selection of grapes at the winery entrance, de-stemming and crushed and into the tank with carbonic ice. Cold maceration for 4 days. Alcoholic fermentation at controlled temperature, daily pisage of skins (pumping-over technique) and délestage (racking and returning the wine back to the tank). Malolactic fermentation in brand new French oak barriques and daily bâtonnage (lees stirring).
Ageing : 16 months in French oak barriques.
