We are in front of a complex wine but its character makes it an easy drinking wine. It goes well with plenty of salads, smoked fish and nuts. Cheese and pasta with sauce. Rice, white meat and fish, specially cod, tuna and salmon. Oven-baked white and blue fish, goat cheese.

Winemaker notes
This single vineyard wine comes from Casa Ramiro estate, whose poor, shallow soil has a very high limestone content.
This wine ages in Roc Cuve® barriques for 4 months. The daily bâtonnage (lees stirring) brings intensified aromas and fullness in the mouth.
Harvest: Beginning of September. This Sauvignon Blanc belongs to a 15 years old vineyard, soils poor in organic materials and plenty of limestone. Hand picked and transported in 15 kg. cases. These grapes were subject to a triple selection: in the vineyard, selection of bunches and selection of grapes.
Wine making: Selection of the grapes and cooling with carbonic ice.
– Pre-fermentative maceration in deposits for 72 hours.
– Free run juice extraction.
– Fermentation in square barriques.
– Ageing in square barriques of French oak for 5 months with daily bâtonnage.
– Bottle ageing for 12 months.
