Lemon yellow with pale gold reflections, brilliant. Very intense and aromatic on the nose, loads of floral hints (orange blossom, roses, jasmine) and citric touches. Mineral and earthy memories. A complex wine to be discovered slowly in the glass. On the palate, it is wide, good acidity for a high expression of minerality and flowers, easy to drink.

Wine elaborated with 100% aromatic Malvasía variety, one of the oldest varieties, as per our references, grown for the first time in Castilla-La Mancha by Bodegas y Viñedos Verum.

Perfect with white fish, low seasoned poultry, salads, tender cheese and white sauce pasta.
Suggested serving temperature: 10ºC to 12ºC
Single vineyard coming from our estate El Romeral; estate dedicated to recover some minority varieties. The wine is fermented at controlled temperature and then go through a lees aging during 3 months. After bottling, we let it rest in the winery for another 6 months before it goes to the market.
Harvest: Grapes are harvested manually, selecting the best bunches of each plant, by the end of September and at dawn.
Wine making: – Cold maceration for 36-48 hours at 10ºC, no skins.
– Free run juice extraction.
– Fermentation at 16ºC for 10 days.
– Lees aging for 3 months.
– No tartaric acid added.
– Natural clarification.
– Rest in bottles for 6 months before being released to market.
The label on the bottle shows a duck known as “Malvasía cabeciblanca” (white headed Malvasía) that can be found in the wetlands in La Mancha, close to Tomelloso. Its peculiar blue beak gives the background colour to the label and its figure is the emblem.
