This is an exclusive wine that we only make in years rated as excellent with a very reduced production of bottles. It is a single vineyard wine from a Merlot vineyard growing on dry land, which is exceptionally rare in the region. The yield of this vineyard is very low, not exceeding 2 kg per stock.

Verum Merlot

Tasting notes

A powerful and elegant wine that reflects the expression of the variety with violets, black fruits, spicy and toasted notes on a mineral chalky background. On the palate it is silky and persistent with smooth tannins.

A perfect match for red meats in stews or roasts like duck or beef. Also with lamb and roasted fish.

Winemaker notes

Fermentation is done in cubic Roc Cuvee barriques of 340 litres with constant cap immersion to ensure continuous skin contact. The ageing process takes place in barriques with the same characteristics and capacity for 24 months.

Harvest: It is harvested manually in 18 kg boxes and only in those years where the quality of the grapes is outstanding.

Winemaking: First the bunches and then the grapes are selected and fermentation is allowed in 300 litres barrels. The ‘crianza’ is carried out in 300, 400 and 600 litres casks for a minimum of 24 months.
